At one time considered the finest cheese in Europe, Brie de Meaux has an ancient past dating as far back as 774 AD. With a rind resembling white velvet and the subtle, nutty flavor of hazelnuts, this cows milk cheese is known as Le Roi des Fromages (The King of Cheeses).

Brie like God intended it to be

East of Paris is Meaux and environs. This is the ancient home of true brie. This is one of the two or three best. It is not expensive, even when you add another third for shipping. This is a big six pounder wheel. You are paying for proper storage. You can even cut it in quarters and freeze three for up to six months if you wrap tightly in a double freezer wrap paper. Stored properly, this cool ripening takes two months to fully develop. Muscular, but never sharp, this 45% minimum FBD (yep, FAT) will make you forget all others. Serve with sauterne to be completely debauched. Otherwise a chalky, flinty white will be proper. Hang the box when you are done.
